Roasted Tomato Salad

Tomatoes
Garlic
Basil
Balsamic/whatever is cheapest vinegar

Take two tomatoes per punter, slice in half and put cut side up on a baking tray. Drizzle with olive oil, then put some basil and chopped garlic on each tomato. Roast for about an hour.

Can be served hot or cold, just pour the juices and some balsamic vinegar over. They are always impressed!
