3 eggs - beaten
Breadcrumbs
Grated Parmesan
Cheese Chicken breasts
Olive Oil Tinned toms
Olives
Capers
Garlic
Red wine
Dip the chicken
breasts in the egg, breadcrumbs and parmesan cheese.
Place in a dish with olive oil and cover with foil
and bake (at about 200).
Meanwhile mix together
tomatoes, olives, capers, garlic, wine (and anything
you fancy - I used to put in sun dried tomatoes and
herbs), season and reduce down.
When chicken is
cooked serve with sauce over the top and roasted new
potatoes with whole garlic cloves and any steamed
broccoli.
